"January of 75’, it was cold and snowy night in Chicago. I was making frequent trips to the city of big shoulders, all in effort to close a deal years in the making. Over the course of things, I'd become acquainted with Cynthia, an alluring attorney. on the other side of the transaction, whose beauty was equally matched by her brains. At the end of a rather brutal marathon negotiation, (where Cynthia relentlessly got me to give more than I should’ve), she discreetly passed a note across the table. “Dinner ?” A nod and a smile, and minutes later we were in a taxi. “Where are we going?” I asked. Cynthia turned to me, as if to let me in on a secret, “Le Perroquet”. Heading north on Michigan Ave, the taxi turned onto east Walton St, and pulled up to an old granite structure. A fresh blanket of snow covered the canopy. We were met by the doorman, who quickly confirmed our reservation, and showed us to a small elevator. It was a slow ride to the third floor. At this point, my curiosity was piqued. A moment later we were met by the restaurant’s proprietor, Monsieur Jovan. A stout Frenchman, immaculately dressed. He radiated an air of etiquette , but with genuine warmth underneath. He left France years earlier, but it was apparent he maintained his European customs. Despite all the formality, he made you feel special. Walking to our table, I was taken aback by the elegance. It was real. Not manufactured, no gimmickry. Something rare, and hard to achieve. The room was an oasis of refinement, richly appointed with paintings of parrots and rare antiques. The menus were in French. Over the next three hours, Cynthia and I reveled in the dishes brought to us on sterling silver carts. "Salade Ambria", medallions of poached salmon, Sauteed breast of duck, and grilled scallops accented by tarragon-flavored beurre blanc. Having the foresight in the moment that I was potentially having the best meal of my life, I thew caution aside and ordered a 71’ Romanee-Conti La Tache to accompany our meal. Adding to the enchantment, while we toasted our wine, the snow continued to fall outside. At the suggestion of Monsieur Jovan, we selected the crunchy chocolate cream and hazelnut meringue dacquoise, and an intense flourless chocolate cake for the finish. Everything about Le Perroquet could be summed up in one word- Extraordinary. The evening was magic. In its time, Le Perroquet received much praise from both critics and clients. Some called it the best restaurant in America. If you were lucky enough to experience Le Perroquet during that time, then you know." - Jimmy M
